Coconut Whey Pudding

Ingredients

  • 1 scoop Biochem 100% Sugar Free Coconut Whey Protein Powder
  • ½ tablespoon sugar
  • 2 egg yolks
  • 1 (14oz) can lite coconut milk
  • 2 tablespoon coconut cream
  • 2 tablespoon flour
  • 1 tablespoon cornstarch
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • ½ cup toasted coconut flakes (optional)

Directions

Combine sugar and egg yolks in a mixing bowl and whisk to combine until light and fluffy (about 5 minutes).  Combine coconut milk and coconut cream in saucepan – heat on low until the liquid starts to scald and you see steam.  Remove pan from heat. Add flour, cornstarch and whey protein to egg mixture and whisk until well combined. Slowly add small amounts of the hot coconut milk to the egg mixture to temper the egg and combine well – repeat process until all of the milk has been added.  Transfer the entire mixture back to the saucepan and heat on medium low heat, whisking frequently until thickened (about 5-10 minutes).  Stir in vanilla extract. Either mix the toasted coconut in with the pudding, or serve it on top. Serve pudding warm or cold. Makes 2 cups.
